Well, it's Tuesday... three more days until payday and you look in your fridge and cupboards and they are practically bare. What do you do?
I'm in this exact situation right now. We scraped up what we needed to pay my landlord our rent money and put gas in our borrowed vehicle, there is literally $4 leftover after that. So what am I doing to make sure that Justin and I are fed this week?
Well, for one, I'm very grateful that I always make sure that I keep my staples stocked up, and that I make chicken bone broth every week. Something else I do is take inventory of everything I have available to cook with: dried beans, jasmine rice, baking ingredients like flour and sugar, onions, potatoes, carrots, other veggies that are in season locally, canned tomatoes, and elbow macaroni noodles... I keep all this on hand to make sure that I can make food to keep us going. I make bread once a week to two weeks, roast a whole chicken or cut it up and make broth from the bones every week, making several other "convenience" items from scratch.
What am I making this week?
We are getting creative tonight, not sure exactly what it will be just yet. I have sorted pinto beans and started soaking them to cook them in the slow cooker tomorrow. We will have pinto beans and fried potatoes tomorrow night, vegetarian chili Thursday night, and Friday will come around and we will have refried bean and cheese burritos with homemade flour tortillas. And on Saturday we get to go grocery shopping.
I am cooking two pounds of dried pinto beans, in no way is this going to be just three meals. What I will do is freeze a lot of what's left over for later chili and bean burrito nights, and whatever other pinto bean meals I can come up with.
I know this wasn't a big "Whoop! We are making it!" style post, but we are two people, and I tend to cook enough for eight when I do stuff like this, it saves time, energy, and money because I will have something going into my freezer for us to use later.
